Broccoli Cheese Soup

I learned how to make this soup in the US, I made it my way and I want to share it here because I love it and I love cheese.


  • ½ white onion chopped
  • 4 tbsp. butter
  • 4 tbsp. all-purpose flour
  • 3 cups of Broccoli cut into small pieces
  • 2 cups warm water
  • 2 cups whipping cream, or half & half
  • 2 chicken bouillon cubes
  • 1 ½ cup cheddar cheese
  • 1 cup carrots, peeled and shredded


  1. Sautee onion in the butter. Add flour and mix well, then add carrots, chicken bouillon cubes, water and whipping cream. Let it cook on medium low heat for 15-20 minutes. It will be like a thick soup.
  2. Pour the cooked soup in the blender to puree. Then put the soup back in the pot.
  3. Add the broccoli and let it cook for 15 minutes.
  4. Add the cheese and let it cook for 10 minutes.
  5. The soup should be thick and creamy. If it is watery for you. Use 1 tbsp. corn starch mixed with 3 tbsp. water. Add it to the soup and let cook for 5 minutes.
