عيش باللحم ـ عربي

I like to make this dish for parties or picnics as an appetizer instead of making sandwiches. They taste so good if you squeeze lemon juice on them.

You can make a large one in a pan. Then cut it into small pieces or shape the dough into small circles and put some meat on top of each one.

When I make the small, individual-sized ones, I roll the dough forward with my fingers to create a decorative edge. They look kind of like small plates.

  • 1 cup Yoghurt
  • ¼ cup Oil
  • ½ tbsp. Yeast
  • 1 tsp Sugar
  • 1 tsp Salt
  • 1 tsp Baking Powder
  • 3 cups All-Purpose flour
  • Water, as needed
  • For the Meat topping:
    • 1 pound ground beef
    • 1 white onion, chopped
    • 1 tsp salt
    • 1 tbsp. cumin
    • 1 tsp. black pepper
    • ½ cup chives, chopped (if not available, use the green part of the green onions or parsley)
    • ½ cup Tahini
    • 1 tbsp. lemon juice
    • 2 eggs


  1. In a bowl mix yoghurt, oil, yeast, sugar, and salt
  2. Add flour and baking powder and knead with your hands. Add water while kneading until a soft dough forms. Put the dough on a clean, floured surface and knead using the heel of your hand until the dough is elastic and nothing is sticking to your hands.
  3. Put the dough in a greased bowl and cover with plastic wrap. Put it in a warm place for about an hour to let it double in size.
  4. Sprinkle some flour on a clean surface, cut the dough into small balls, and then roll them out to make thick, flat circles. Roll the edges forward and place on a baking sheet. (Another way is to flatten all of the dough at once and then place it on a baking sheet.
  5. For the Meat:
  6. Sautée the onion. Then add the meat and spices. Stir and let it cook until tender. Remove from heat, cover and let cool at room temperature.
  7. Add one egg, tahini, lemon juice and chives to the meat. Mix well.
  8. If you are making the small, individual-sized ones, place a small amount of the meat mixture on each circle. If you are making one large one, then evenly spread all the meat on top of the dough.
  9. Use the other egg to brush the top and the crust on all sides.
  10. Bake for 20-30 minutes or until golden brown.
  11. Serve with lemon wedges.
