Ehis is another way of cooking Edam. As I mentioned in a previous post (Edam-1) that Edam is a popular dish in the Middle East. It is made with different types of vegetables and can be cooked with either lamb, beef, or chicken.

In this recipe, I cooked it with chicken breasts potatoes, carrots and zucchini. Usually, people serve Edam with white rice and/or eat it with bread and dip the bread in the red sauce.

I peeled the vegetables and cut them into small cubes. Then added the tomato sauce.1


  • 2 chicken breasts, cut into 8 pieces each
  • 1 big zucchini, cut into cubes
  • 3 big carrots, peeled and cut into cubes
  • 1 big potato, peeled and cut into cubes
  • ½ white onion, chopped
  • 3 tsp olive oil
  • 2 tomatoes
  • ½ Tomato sauce
  • ¼ cup cilantro, chopped
  • 2 cloves garlic
  • 1 tsp black pepper
  • 1 tsp. salt
  • 1 chicken cube
  • 1 cup boiled water


  1. Sauté onion using olive oil.
  2. Add chicken and stir until it’s white. About 10 minutes
  3. Add vegetables, spices and chicken cubes.
  4. Add tomatoes, garlic, tomato sauce and cilantro in the food processor, mix well.
  5. Add the tomato mixture to the chicken, then mix well.
  6. Cover and let it cook on medium heat for about 30-40 minutes, or until chicken and vegetables are tender.
