Ground Beef Samboosah (سمبوسة باللحم المفروم)

This is another recipe for Samboosah. In a previous post, I made Samboosah stuffed with vegetables and I prepared the dough for it. However, in this recipe I used ready-made Samboosah pastry sheets and I stuffed them with ground beef. The shape of the pastry sheet is a thin long rectangle. After stuffing the pastry and wrapping it, the final shape of the Samboosah will be a triangle. It doesn’t matter what type of stuffing is used for the Sambosah nor does the type of pastry sheets matter. Sometimes I use egg roll wraps to make Samboosah. I cut them in middle to make it to two thin sheets. Then I stuff each one and wrap them, or I make rolled Samboosahs.

Folding the Samboosah to make a triangle shape is similar to folding a flag. Put a small amount of the cooked ground meat on one end, starting from the same end where you put the meat fold the sheet so that the bottom edge meets the side edge to form a triangle. Continue folding the triangle sideways and upward until you reach the end of the sheet, brush the end with water then fold to close the Samboosah. Make sure to fold it tightly so it will not open while frying it and so that it will not be oily.Samboosah

  • Samboosah pastry sheets
  • 1 pound ground beef
  • 1 white onion chopped
  • Salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • ½ cup Parsley chopped
  • ½ cup of green onion chopped
  • Oil for frying


  1. Sautee onion until tender. Add ground meat and spices. Stir well. Then cover and let cook on medium heat until meat is tender. Then remove from heat.
  2. Add parsley and green onion and stir.
  3. Put a small amount of the stuffing in a Samboosah sheet. Then, fold.
  4. Fry Samboosah until golden brown.
