كباب ـ عربي

This is a simple recipe for making Kebabs in the oven instead of on the grill. I give it the smoky taste of the grill by putting a piece coal in a cup of Mazola oil or butter. I put the cup in the center of the Kebabs and cover everything with foil to keep the smoke inside. I like to serve Kebabs with tahini sauce, smoked Saffron rice (the rice and tahini recipe will be posted soon), or to serve Kebabs with fresh vegetables and pita bread to make sandwiches.

  • 1 pound ground beef
  • ½ white onion
  • ½ cup parsley
  • 1 tbsp. minced garlic
  • 3 tbsp. all-purpose flour
  • 1 tsp. salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 tsp turmeric
  • 2 cups Mazola oil (with 3 tbsp. of this reserved for meat mixture)
  • 1 small piece of coal to give the meat a smoky flavor


  1. Chop onion and parsley in a food processor until onion is finely chopped.
  2. In a bowl, combine chopped onion, flour, ground meat, 3 tbsp. oil, garlic and spices. Knead it by hands for 5 minutes (the more kneading the better it becomes).
  3. Put the rest of the oil in a frying pan on medium heat.
  4. Take a small amount of the meat. Form it into a long thin shape (like a cheese stick). Then flatten the meat slightly.
  5. Put the piece of meat in the pan and cook for a few seconds on both sides just to give a light brown color. Repeat with remaining meat.
  6. Put cooked kebabs in a baking pan. Prepare a piece of aluminum foil to cover the pan. Set aside.
  7. To smoke the Kebabs: Heat the coal.
  8. Take some of the oil used for cooking the meat and put it in a small cup or bowl.
  9. Put the cup of used oil in the middle of the pan.
  10. Put the heated coal in the oil cup and immediately cover the pan with aluminum foil to keep the smoke inside. Keep it covered for at least 5 minutes. Then remove the cup.
  11. Keep the cover on the meat and let it cook for 20 minutes at 350 degrees.
