خبز ملوح ـ عربي

This is a type of bread that is very popular in Yemen and has many names such as, Adani Bread or Khobz Tawah. It is similar to the Indian bread “Bartha” crispy from the outside and has layers from the inside. People make it for breakfast and serve it warm with a cup of Adani tea. You can make as many as you want and freeze it or put in the fridge for couple of days.

First: make soft dough, cut it into 3-4 pieces then cover and let it rest for 15 minutes.


ٍSecond: roll out one piece of the dough and brush the top with oil


Third: flip the dough into thirds.




  • 2 cups wheat flour
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp black seeds
  • 2 cups Mazola oil (use ghee if available)
  • 1 cup water


  1. Combine wheat flour, all-purpose flour, salt, black seeds and half cup of oil.
  2. Add water gradually and knead until soft dough is formed.
  3. Cut the dough into 3 or 4 pieces. Cover the dough and let it rest for 15-20 minutes.Roll one piece as big as it gets. Brush it with oil then fold it into thirds to form rectangle. Fold it again from the narrow ends into thirds to form a square.
  4. Do the same with all dough pieces.
  5. Heat a frying pan on medium high heat.
  6. Roll out one of the folded dough to ½ inch thick.
  7. Put 2 tbsp. of oil in the heated frying pan and place the rolled out dough in it. Let it cook until golden brown. Put 2 tbsp. of oil on top then flip to let it cook from the other side. (Add oil as needed)
  8. Remove the bread from the pan when it is golden brown from all sides.
  9. Do the same with the rest of the folded dough and serve them warm.
