Kushari is a popular dish in Egypt. It is made with rice, lentils, chickpeas, pasta, topped with tomato sauce and onions. The tomato sauce used to pour over Kushari is varied. Some like the sauce to be hot and spicy while others like it to be sour (which I will be making in this recipe.)

another ingredient I would like to show you is the vermicelli. It comes in small bags and you can find it in any grocery store in the Asian food section.

As I mentioned above the tomato sauce I made is sour. You can serve it directly on the rice or you can put it in a bowl on the side (which I prefer).




  • 1 cup lentils
  • 1 cup rice
  • ½ cup vermicelli
  • 3 tbsp. Mazola oil
  • 1 cup pipette pasta
  • ½ cup chickpeas
  • 1 tsp salt
  • 3 cups water
  • For the Sauce:
    • 2 tomatoes, chopped
    • 1 cup tomato sauce
    • ½ white onion, chopped
    • 2 tbsp. garlic, minced
    • ¼ cup white vinegar
    • 1 tsp salt
    • 1 tbsp. cumin
  • For the topping:
    • 1 white onion, thinly sliced
    • ½ cup flour


  1. In a medium pot, boil lentils in one cup of water for 10 – 15 minutes.
  2. In another pot, put the vermicelli and oil. Stir the vermicelli continuously until it becomes dark brown.
  3. Add rice, cooked vermicelli, and 2 cups of water to the lentils.
  4. Cover the pot and let it cook for 15 minutes or until there is no water and rice is cooked.
  5. Add chickpeas and cover the pot.
  6. In another medium pot, boil the pipette pasta as directed on the box
  7. For the sauce:
    • In a medium pot, sautee onion and garlic with the Mazola oil for 3 minutes on high heat.
    • Add tomatoes, tomato sauce, vinegar, salt and cumin.
    • Cover the pot and let cook for 5-8 minutes.
    • Puree the tomato mixture in the blender, then pour it back into the pot.
    • Cover the pot again and let it cook on low heat for 3 more minutes.
  8. For the topping:
    • Mix the onion slices and the flour.
    • Remove the onion from the flour then Fry onion in hot oil until it is light brown.
  9. Serving Kushari
    • Put one layer of the rice and lentil mixture on a serving plate.
    • The second layer is the pipette pasta.
    • The third layer is the tomato sauce.
    • The forth layer is the onion topping.
