This is a simple recipe for making cheesecake without baking in the oven. I have heard of the lotus butter and never tried it. Today I went grocery shopping and saw the Biscoff lotus and the lotus butter spread in one of the aisles. I decided to make my favorite no-bake cheesecake with lotus spread on top.

I made the cheesecake in cupcake pan to make small single servings.

Ingredients

  • 2 cups ground graham crackers
  • 1 tbsp. brown sugar (optional)
  • 1 stick unsalted butter, melted
  • 15 oz. Philadelphia cream cheese (15 big spoons of Philadelphia cream cheese)
  • 1 can sweetened condensed milk
  • ¼ cup lemon juice
  • 1 cup lotus biscoff spread

Directions

  1. Line a cupcake pan with paper cupcake liners
  2. Mix the graham crackers, butter and the brown sugar.
  3. Put some of the cracker mix into the paper cupcake to fill 1/3 full. Press down to make it flat.
  4. Put the pan in the fridge while making the filling.
  5. Put cream cheese in a bowl, use cake mixer to mix the cheese until soft.
  6. Add the sweetened milk and the lemon juice and mix well.
  7. Bring the pan from the fridge. Put some of the cheese mixture on the crackers and fill it to the top.
  8. Put in the pan in the fridge overnight.
  9. Before serving the cheese cake, heat lotus biscoff spread in the microwave for 15 seconds to make it soft. Pour some on the cheesecake. Decorate with crushed biscoff lotus.

  1. Hi! I really like your blog and I was wondering where you typically buy your ingredients? Lotus butter and some other spices you mention aren’t very common and I have a hard time finding them.

    • Hi, I am happy you like the blog. I found the lotus spread in Walmart. I think you can find it in any grocery store in the same aisle next to the peanut butter. the spices I get them from international stores. If you are in Missoula then Good Food store is a good place for spices.

  4. Also, can I use kiri cheese instead of Philadelphia and please tell me how many pieces of kiri cheese do I need for this recipe?

    • I never used Kiri to make cheesecake, I think the taste will be different. you can try Kiri and Please let me know how you like it 🙂
      I think each Kiri is like one tbsp. The main thing is to make sure the mixture is not too soft or too thick.
