This recipe is so simple and easy. The dough is the same as in Eash Bellaham just different topping, which is Za’atar mixed with olive oil. Manakeesh Za’atar is a very popular Levantine Arabic food served for breakfast or lunch. Some people use pita bread as an alternative for the dough but I prefer making the dough.  you can shape the dough as in Eash Bellaham small flattened circles or a big one and cut it like pizza after baking it.



  • 1 cup Yoghurt
  • ¼ cup Oil
  • ½ tbsp. Yeast
  • 1 tsp Sugar
  • 1 tsp Salt
  • 1 tsp Baking Powder
  • 3 cups All-Purpose flour
  • Water, as needed
  • For the Meat topping:
    • 2 cups Za’atar
    • 1 cup olive oil
    • 2 tbsp. water


  1. In a bowl mix yoghurt, oil, yeast, sugar, and salt
  2. Add flour and baking powder and knead with your hands. Add water while kneading until a soft dough forms. Put the dough on a clean, floured surface and knead using the heel of your hand until the dough is elastic and nothing is sticking to your hands.
  3. Put the dough in a greased bowl and cover with plastic wrap. Put it in a warm place for about an hour to let it double in size.
  4. Sprinkle some flour on a clean surface, cut the dough into small balls, and then roll them out to make thick, flat circles. Roll the edges forward and place on a baking sheet. (Another way is to flatten all of the dough at once and then place it on a baking sheet.
  5. For the Za’atar:
  6. combine all ingredients in a bowl and mix well
  7. If you are making the small, individual-sized ones, place a small amount of the Za’atar mixture on each circle. If you are making one large one, then evenly spread Za’atar mixture on top of the dough.
  8. Bake for 20 minutes or until golden brown.
