This is a very simple and easy vegetarian appetizer. It has different names such as Mutabbal/Baba Ghanoush and the main ingredient is eggplant. It can be either cooked in the oven or grilled. This is one of the ways of cooking Mutabbal/Baba Ghanoush.  I will post another recipe in the future showing another way to prepare it.

Today I poked small holes in two eggplants with a knife and then cooked them in the oven for about 45 minutes.


I then let them cool.  After that, I peeled off the skin.  Then, I puree the eggplants with all other ingredients in the food processor


  • Two eggplants
  • 1 tsp salt
  • 2 cloves garlic
  • 1 tsp ground cumin
  • 3 tbsp. tahini
  • 2 tbsp. lemon juice


  1. Preheat oven to 350 degrees.
  2. Line a baking sheet with aluminum foil.
  3. Use a knife to poke the eggplants several times from different angles then brush them with olive oil.
  4. Place the eggplant on the baking sheet.
  5. Cook for 30 minutes to 1 hour until the eggplants are tender. Remove the eggplants from the sheet and cool them for couple of minutes.
  6. Peel the eggplant and place them in a food processor or blender. Add garlic, lemon Juice, salt, cumin and tahini. Mix until smooth.
  7. You can drizzle olive oil while blending if the paste is too thick.
  8. Pour into a large bowl, drizzle some olive oil on top, and garnish with parsley and sumac.
