Sugar Syrup (شيرة – قطر)

Sugar Syrup is used in many different desserts in the Arab world. This is the recipe I use whenever I need sugar syrup. Sometimes I make it in large amounts and save the syrup in a jar in the fridge for couple of days. I also add lemon juice to the syrup so it doesn’t crystallize. Some people like to flavor the syrup with saffron, cardamom or cloves. For me, I like to keep it simple without any flavor to keep the original flavor of the dessert I am making.


  • 1 cup water
  • 2 cups sugar
  • 1 tbsp lemon juice


  1. Combine water and sugar in a pot.
  2. Bring to a boil until sugar is dissolved, almost 10-15 minutes.
  3. Add lemon juice and stir.
  4. Remove from heat and let cool to room temperature.
