Sumac is a spice that is dark red in color. The name comes from Aramaic “summaq” meaning “dark red.” Sumac has a sour lemon taste. However, you can’t substitute sumac for lemon. It is usually used to rub meat and fish because it adds a nice pink color to the food. (More info.)
