As indicated by its name, the Merchant Pocket Sandwich reflects the rich taste and texture of the pockets. These pockets are made from bread (wheat or white) and can be stuffed with anything you want. In this recipe, I stuffed them with chicken and lettuce.

First, I made the pockets. I used the rolling pin to flatten two pieces of bread together. Don’t try to separate the two pieces of the bread. Keep them stuck together. Then, I cut the two flattened pieces into one circle. You can use anything in your kitchen that will help you to cut out a big circle.



To make bread crumbs, I took the remaining crust and put it on a baking sheet and toasted them in the oven until lightly browned (about 1 min.) Then, I ground them in the food processor. You can also use ready-made bread crumbs from the store.


I coated the circles with 2 beaten eggs.  Then I placed them in the bread crumbs to coat them.


Then, I fried them in hot oil, one at a time, for about one minute until the toast inflated and had a golden brown color.


The stuffing I used today is chicken. I sautéd onion and added chicken to it with some salt and black pepper. I used table cream to give it a creamy taste and make it moist instead of adding any type of sauce to the sandwich.


Ingredients for Bread Pockets

  • 18 slices of White bread (you may use wheat if you prefer)
  • 3 eggs, well beaten
  • 2 cups bread crumbs
  • oil for deep frying

Ingredients for Filling

  • 1 chicken breast cut into small pieces
  • 1 green pepper cut into small pieces
  • 4 tbsp. table cream
  • ½ onion chopped
  • ½ tsp black pepper
  • Salt to taste
  • ½ tsp cumin
  • 1 cup shredded lettuce

Directions for Bread Pockets

  1. Put two slices of bread on top of each other and flatten using a rolling pin.
  2. Cut the flattened toast into one big circle. Put the remaining crust in the oven for a minute and grind it in the food processor to use as bread crumbs. You can also use ready-made crumbs from the store.
  3. Dip the bread circles in the eggs. Then coat them in the bread crumbs.
  4. Fry the circles in hot oil 1 at a time for about 1 minute. (The toast will puff up and have a golden brown color.)
  5. After frying, let the toast cool and cut it into two halves so that it looks like pita bread pockets.

Directions for Filling

  1. Sauté onion until golden brown.
  2. Add chicken, green pepper and spices, stir, and let it cook until the chicken is tender.
  3. Remove from heat and add table cream.
  4. Stuff the toasted pockets with lettuce and chicken to make a delicious sandwich.
