Vegetable Samboosah(سمبوسة خضار)

Samboosah is a traditional dish in the Middle East which has become popular in other regions, such as India. It is a fried pastry that can be stuffed with a variety of different meats and vegetables. The stuffing can be made from ground beef, vegetables, lentils, or cheese – or a combination of more than one thing. So, vegetarians can enjoy it too! Samboosah can be made with either dough or samboosah sheets, which are similar to egg roll wrappers. It comes in many different shapes such as half circles, triangles, or tetrahedrons. Some people make a big amount of samboosah and freeze them, especially during the month of Ramadan.
In this recipe, I will walk you through the steps of making vegetarian samboosahs.

First, I make the dough. It should be soft but not sticky.


Second, I make stuffing from potatoes, carrots, green onion, green pepper and onions.


Third, I cut the dough, roll it, and stuff it.



In the image below, I used a samboosh cutter, which is similar to a pizza cutter.


As an alternative, you can use a half-circle cutter.


Or, a triangle cutter.


This is how a vegetarian samboosah looks like from the inside.




  • For the dough:
    • 3 cups all-purpose flour
    • 1 ¼ cup water
    • 1 tsp salt
    • ¼ cup Mazola vegetable oil
  • For the vegetarian stuffing:
    • 2 potatoes, boiled and peeled
    • 2 big carrots peeled and shredded
    • 1 small white onion, chopped
    • 1 cup total of cilantro and parsley, chopped
    • 3 green onions, chopped
    • 1 small green pepper, chopped
    • 1 tbsp. curry powder
    • 1 tsp cumin
    • 1 tsp black pepper
    • 1 tsp coriander powder


  1. For the dough:
    • Combine flour, salt, and oil in a bowl.
    • Add water gradually while kneading the dough.
    • Move the dough onto a clean surface, sprinkle some flour and knead until dough is soft.
    • Cover the dough with plastic wrap and set aside.
  2. For the stuffing:
    • Sautee onion, green pepper, and carrots until tender.
    • Mash the boiled potatoes. Then add to the carrots and green pepper.
    • Add the chopped green onion, salt, and spices.
    • Mix well and set aside.
  3. to make the Sambosah:
    • Divide the dough into small balls then use the rolling pin to make small flat circles.
    • (Note: Another option is to divide the dough into small pieces.  Roll each piece, one at a time, into a large circle and cut into 5”X 4” pieces)
    • Place 1 tbsp. of the stuffing on each piece. Then flip one side of the dough onto the other side and seal tightly. Make sure the edges are completely sealed.
    • You can use a pizza cutter to cut the pieces after closing them to shape the samboosah into half circles. Or you can use a samboosah cutter.
    • Deep fry in oil until golden brown.
